Solubility: soluble in water, and slowly hydrolysis, solubility in water is 59g/100ml, slightly soluble in ethanol, 1g/100ml in ethanol, insoluble in ether.
Main purposes: as a coagulant of tofu, flavoring agent, reducing agent and pH leavening agent of raw materials.
Usage, usage and range of use: all kinds of food (except for foods listed in table GB2760 of 4) shall be used according to the production requirements. Lactone and baking soda (2:2.1:1) can be used as a leavening agent. As pigment stabilizer, luncheon meat, sausage in per kilogram of product plus the product of 3 grams. As a preservative, this product and potassium sorbate in coordination with the use of is recognized as the best preservative, but also can be used as tartar precipitation prevention agent, adding amount of 0.1-0.5% in general, can also be used as flour improver.

Validity and storage:
Store in a cool, airy warehouse. Keep away from fire and heat. The temperature should not exceed 30 DEG C. Keep the container sealed. Should be stored with oxidants, acids, alkalis stored separately, shall not be mixed storage. Shelf life is 18 months, 25kg/ bag or 10kg/ case.
